Description

This Greek-inspired dish features tender, marinated chicken served with a fresh vegetable bowl, topped with homemade tzatziki sauce. It’s perfect for a balanced and healthy meal!

For the Chicken Marinade:

  • 1 1/4 lb small chicken breasts (4 pieces)

  • 1/4 cup olive oil

  • 2 tablespoons honey

  • 2 tablespoons lemon juice

  • 1 1/2 teaspoons dried oregano

  • 1 tablespoon lemon zest

  • 1 1/2 teaspoon dried basil

  • 1 teaspoon salt

  • 1 teaspoon garlic powder

  • 1/2 teaspoon red pepper flakes (optional, for heat)

  • 1/4 teaspoon black pepper

For the Bowl Filling:

  • 4 cups romaine lettuce, shredded

  • 2 cups cherry tomatoes, halved

  • 2 cups cucumber, diced

  • 2 cups cooked white rice

  • 1 cup red onion, thinly sliced

  • 1/2 cup feta cheese (optional)

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt (or low-fat sour cream)

  • 1/2 cup cucumber, grated

  • 1 tablespoon fresh dill, finely chopped

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice

  • 1 teaspoon minced garlic

  • 1/4 teaspoon salt (to taste)


Instructions

  1. Marinate the Chicken: Whisk together all the marinade ingredients. Pound the chicken to about 1/2 inch thick and place in a shallow bowl or ziplock bag with the marinade. Let marinate for at least 30 minutes, or up to a few hours.

  2. Prepare the Tzatziki Sauce: Combine all the ingredients for the tzatziki sauce and set aside.

  3. Cook the Rice and Prep Veggies: While the chicken marinates, cook the rice and prep the veggies (chop tomatoes, cucumbers, red onions, and lettuce).

  4. Cook the Chicken: Preheat your air fryer to 380°F. Cook the chicken for about 7 minutes on one side, then flip and cook for another 3-4 minutes or until it reaches an internal temperature of 165°F. If you don’t have an air fryer, heat a skillet with some oil or butter over medium-low heat. Fry the chicken for 7-8 minutes on one side, then flip and cook until golden brown and the internal temperature hits 165°F.

  5. Rest the Chicken: Once the chicken is cooked, let it rest for 5 minutes before slicing it thinly.

  6. Assemble the Bowls: Start with a base of rice, then add the prepared veggies (tomatoes, cucumbers, onions, lettuce), top with sliced chicken, and drizzle with tzatziki sauce. Optionally, finish with a drizzle of olive oil and lemon juice, or use lemon tahini dressing for extra flavor. Enjoy!

Notes

  • Marinate the chicken for at least 30 minutes, but for the best flavor, allow it to marinate for up to a few hours.

  • If you don’t have an air fryer, use a skillet to cook the chicken over medium-low heat for a crispy result.
