Description
These delicious and nutritious pancakes are packed with protein from cottage cheese and bursting with fresh blueberries. Perfect for a healthy breakfast or brunch!
Ingredients
1 cup of whole wheat flour
1 cup of cottage cheese
2 large eggs
1 cup of fresh blueberries
1 tablespoon of honey or maple syrup (optional)
1 teaspoon of baking powder
A pinch of salt
Cooking spray or a little oil for the pan
Instructions
1. In a mixing bowl, combine the whole wheat flour, baking powder, and salt.
2. In another bowl, whisk together the cottage cheese, eggs, and honey/maple syrup until well combined.
3. Gradually add the dry ingredients to the wet ingredients and mix until just combined; fold in the blueberries gently.
4. Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or oil.
5. Pour about 1/4 cup of pancake batter onto the skillet for each pancake.
6. Cook for about 2-3 minutes on one side until bubbles form on the surface; flip and cook for an additional 2-3 minutes until golden brown.
7. Serve warm with additional blueberries or syrup if desired.
Notes
This recipe can be easily customized by adding nuts or other fruits. For a vegan version, substitute eggs with flaxseed meal mixed with water.
