For the Pasta Salad:

  • ½ cup corn (fresh or canned, drained)
  • ¼ cup black olives, sliced
  • ¼ cup shredded cheddar or Monterey Jack cheese
  • 2 tablespoons fresh parsley or cilantro, chopped

For the Creamy Cajun Dressing:

  • ½ cup mayonnaise
  • ¼ cup sour cream or Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon honey (optional, for balance

Instructions

1. Cook the Pasta:

Bring a large pot of salted water to a boil. Cook pasta according to package instructions, then drain and rinse under cold water to stop the cooking process. Set aside.

2. Grill the Chicken:

Preheat a grill or grill pan to medium-high heat. Rub chicken breasts with olive oil, Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Grill for 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Let rest for 5 minutes, then slice into strips or cubes.

3. Make the Dressing:

In a bowl, whisk together mayonnaise, sour cream (or Greek yogurt), Dijon mustard, lemon juice, Cajun seasoning, garlic powder, smoked paprika, and honey until smooth.

4. Assemble the Salad:

In a large mixing bowl, combine cooked pasta, cherry tomatoes, bell peppers, red onion, corn, black olives, shredded cheese, and parsley. Add the sliced grilled chicken. Pour the dressing over the salad and toss to coat.
