Description
These grilled carrots are tender with a light char and coated in a sweet, sticky glaze made from honey and brown sugar. It’s an easy and flavorful side dish perfect for barbecues, holiday dinners, or casual weeknight meals.
Ingredients
1 lb carrots, peeled and halved lengthwise (or left whole if thin)
1 tablespoon olive oil
Salt & pepper, to taste
2 tablespoons honey
1 tablespoon brown sugar
1 tablespoon butter (or plant-based butter)
½ teaspoon cinnamon (optional)
Fresh parsley (optional, for garnish)
Instructions
Preheat your grill to medium heat.
Toss the carrots with olive oil, salt, and pepper.
Place the carrots on the grill and cook for 15–20 minutes, turning occasionally until they are fork-tender and lightly charred.
While the carrots cook, combine honey, brown sugar, butter, and cinnamon in a small saucepan over medium-low heat. Stir until melted and smooth, about 2–3 minutes.
Brush the glaze over the carrots during the last 2–3 minutes of grilling, allowing it to caramelize slightly.
Remove from the grill, drizzle with any remaining glaze, garnish with parsley if desired, and serve warm.
Notes
Roast Option: Bake at 425°F (220°C) for 25–30 minutes if a grill is unavailable.
Even Cooking: Choose carrots of similar size.
Extra Flavor: Add maple syrup for depth or chili flakes for a spicy kick.
Dairy-Free: Use plant-based butter to make it dairy-free.
