Description
This creamy and rich beef stroganoff is a classic dish that combines tender strips of beef with mushrooms and a savory sauce, served over egg noodles or rice for a comforting meal.
Ingredients
1 lb (450g) beef sirloin, thinly sliced
2 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, minced
8 oz (225g) mushrooms, sliced
1 cup (240ml) beef stock
1 cup (240ml) sour cream
2 tbsp Dijon mustard
Salt and pepper to taste
2 tbsp fresh parsley, chopped (for garnish)
Egg noodles or rice (for serving)
Instructions
1. Heat the olive oil in a large pan over medium-high heat. Add the sliced beef and sear until browned on all sides. Remove from the pan and set aside.
2. In the same pan, add the chopped onion and cook until softened. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are browned.
3. Pour in the beef stock and bring to a simmer. Stir in the sour cream and Dijon mustard. Return the beef to the pan and let it simmer for a few minutes until heated through.
4. Season with salt and pepper to taste.
5. Serve over cooked egg noodles or rice, garnished with fresh parsley.
Notes
This dish is best served immediately but can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stove.
