Ingredients

For the cheesy mashed potatoes:
– 2 lbs russet or Yukon gold potatoes, peeled and cubed
– ½ cup whole milk or heavy cream (warm)
– 4 tbsp unsalted butter
– 1½ cups shredded sharp cheddar (or a cheese blend you love)
– Salt & pepper, to taste
– Optional: sour cream or garlic powder for extra richness
Instructions
Step 1: Boil the Potatoes
Add cubed potatoes to a pot of salted water. Bring to a boil and cook until fork-tender, about 15–20 minutes. Drain and return to the hot pot to steam dry for a minute or two.
Step 2: Mash and Mix
Mash the potatoes with butter, then stir in the warm milk or cream, shredded cheese, and a pinch of salt and pepper. Taste and adjust seasoning. If you’re feeling extra, add a spoonful of sour cream or a dash of garlic powder.
Step 3: Sear the Steak Bites
While the potatoes are boiling, pat steak cubes dry with a paper towel. Season generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
