Description
It’s juicy, pan-seared chicken bathed in a rich, garlicky butter sauce that’s straight-up addictive. We’re talking crispy-edged, tender chicken with a golden, buttery glaze that clings to every bite. This is comfort food made fancy-ish—with very little effort.
Ingredients
For the chicken:
– 1½ lbs boneless chicken thighs or breasts, pounded to even thickness
– Salt & pepper
– 1 teaspoon Italian seasoning (or just oregano + thyme)
– 2 tablespoons olive oil
For the garlic butter sauce:
– 4 tablespoons butter
– 5–6 garlic cloves, minced (don’t skimp)
– 1/4 cup chicken broth (or dry white wine for a little zhuzh)
– Juice of 1/2 lemon
– Chopped parsley for garnish
Instructions
Step 1: Season and Sear
Season chicken on both sides with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook 4–5 minutes per side, until golden and cooked through. Transfer to a plate and keep warm.
Step 2: Make That Sauce
In the same skillet, lower the heat and add the butter. Once melted, stir in garlic and sauté for 30 seconds until fragrant (don’t let it burn!). Add broth and lemon juice, scraping up any browned bits.
Step 3: Simmer and Combine
Let the sauce simmer for 2–3 minutes to reduce slightly. Return the chicken to the skillet and spoon that garlic-butter goodness all over it. Cook for another 2 minutes to let everything mingle.
Step 4: Serve and Brag
Garnish with chopped parsley and serve hot over pasta, mashed potatoes, or roasted veggies.
