Ingredients
1½ lbs boneless, skinless chicken breasts or thighs, cut into bite-size pieces
Salt and black pepper, to taste
1½ tsp paprika (smoked if you want extra oomph)
½ tsp crushed red pepper flakes (optional but recommended)
2 tbsp olive oil
3 tbsp unsalted butter
5 cloves garlic, finely minced or grated
1 tbsp chopped fresh parsley (for that fancy finish)
Juice of ½ a lemon (optional but zingy)
Instructions
Step 1: Season it up
In a bowl, toss your chicken pieces with salt, pepper, paprika, and red pepper flakes. Make sure everything is well coated—don’t skimp on the seasoning; this is where the flavor starts.
Step 2: Sear to golden perfection
Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken in a single layer (you might need to do this in batches to avoid steaming). Let it sear undisturbed for 2–3 minutes, then flip and cook another 3–4 minutes until cooked through and golden. Remove to a plate and keep warm.
Step 3: Butter + garlic = yes
Lower the heat to medium, add the butter to the same skillet. Once melted, toss in the minced garlic. Stir constantly for about 30 seconds to 1 minute until fragrant—don’t let it burn!
Step 4: Toss and finish
