For the Rollups:

  • 1 tube (16 oz) refrigerated biscuit dough (the flaky kind works best)
  • 8 strips bacon, cooked crispy and crumbled
  • 1/2 cup sharp cheddar cheese, shredded (optional but recommended)
  • 2 green onions, finely chopped

For the Garlic Butter Magic:

  • 1/2 cup butter, melted
  • 4 cloves garlic, minced (or 1 tsp garlic powder if you’re lazy)
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Pinch of red pepper flakes (optional)

For the Topping:

  • 1/4 cup parmesan cheese, grated
  • Extra parsley for garnish
  • Flaky sea salt for finishing

Instructions

Step 1: Prep Your Bacon

Cook bacon until crispy (however you like — pan, oven, whatever works).

Drain on paper towels and crumble into bite-sized pieces. Try not to eat half of it while you work.

Step 2: Make the Garlic Butter

Mix melted butter with minced garlic, parsley, Italian seasoning, salt, pepper, and red pepper flakes.

Stir it up and let those flavors get acquainted while you work on the dough.

Step 3: Roll It Out

Preheat oven to 375°F and line a baking sheet with parchment paper.

Separate biscuit dough and gently roll each piece into a 4-inch circle (don’t stress about perfection).

Step 4: Fill and Roll

Brush each circle with about half the garlic butter mixture.

Sprinkle bacon crumbles, cheese (if using), and green onions over each circle.

Roll up tightly from one side, pinch the seam closed, and place seam-side down on the baking sheet.

Step 5: Butter and Bake

Brush the tops with remaining garlic butter mixture.

Sprinkle with parmesan cheese.

Bake for 12-15 minutes until golden brown and puffed up.

Step 6: Finish Strong

Let cool for 2-3 minutes, then sprinkle with fresh parsley and a tiny pinch of flaky sea salt.
