Description
This is not your college instant noodles. Fiery Chicken Ramen with Creamy Garlic Sauce is a bold, spicy, creamy bowl of comfort that will absolutely blow your basic ramen out of the water. We’re talking tender chicken seasoned with a kick, bouncy noodles swimming in a silky garlic sauce, and just enough heat to make your taste buds dance. It’s basically what would happen if your favorite ramen shop and a garlic cream pasta had a spicy love child.
Ingredients
For the chicken
2 chicken breasts or thighs, thinly sliced
1 tbsp soy sauce
1 tbsp sriracha or hot chili sauce
1 tsp sesame oil
Salt and pepper to taste
For the creamy garlic sauce
1 tbsp butter
4 garlic cloves, minced
1 tbsp flour
1½ cups chicken broth
½ cup milk or half-and-half
¼ cup grated parmesan (optional but delicious)
1 tbsp soy sauce
½–1 tsp chili flakes (adjust to your fire level)
For the ramen
2 packs ramen noodles (ditch the seasoning packets)
Green onions, soft-boiled egg, sesame seeds, and chili oil for topping (optional but highly encouraged)
Instructions
Step 1: Marinate the Chicken
In a bowl, toss the chicken with soy sauce, sriracha, sesame oil, and a pinch of salt and pepper. Let it marinate for 10–15 minutes while you prep everything else.
Step 2: Cook the Chicken
Heat a large skillet over medium-high heat. Sear the marinated chicken until cooked through and slightly caramelized—about 5–6 minutes. Remove from the pan and set aside.
Step 3: Make the Sauce
In the same skillet, melt the butter over medium heat. Add the garlic and cook until fragrant, about 1 minute. Stir in the flour and cook for another minute to form a roux. Slowly whisk in the chicken broth and milk until smooth. Simmer for a few minutes until it thickens slightly. Stir in soy sauce, chili flakes, and parmesan if using. Taste and adjust—more heat? Add more chili. Want it richer? More cheese.
Step 4: Cook the Noodles
Meanwhile, cook the ramen noodles according to package directions (usually 2–3 minutes). Drain and set aside.
Step 5: Bring It All Together
Add the cooked noodles and chicken into the sauce. Toss everything to coat those noodles in the creamy, garlicky, spicy goodness. Add a splash of water or broth if it gets too thick.
Step 6: Serve It Hot
Pile it into bowls. Top with green onions, a soft-boiled egg, sesame seeds, and a drizzle of chili oil if you’re feeling fancy. Or just dive in straight from the pan—we won’t judge.
Notes
Use tofu or mushrooms instead of chicken for a veg version
Add peanut butter to the sauce for a Thai-style vibe
Swap ramen for udon or soba if that’s what you’ve got
Top with crushed peanuts or crispy shallots for crunch
