Description

These Feta Spring Flatbreads are a delightful and fresh dish perfect for spring gatherings. Topped with creamy feta, vibrant vegetables, and herbs, they make a light lunch or appetizer.


Ingredients

2 cups of all-purpose flour
1 teaspoon of salt
1 teaspoon of baking powder
3/4 cup of water
2 tablespoons of olive oil
1 cup of crumbled feta cheese
1 cup of mixed spring vegetables (such as asparagus, radishes, and cherry tomatoes)
Fresh herbs (such as basil or parsley) for garnish


Instructions

1. In a large bowl, combine the flour, salt, and baking powder. Gradually add water and olive oil until a dough forms.
2. Knead the dough on a floured surface for about 5 minutes until smooth. Let it rest for 10 minutes.
3. Preheat a skillet over medium heat.
4. Divide the dough into equal portions and roll each portion into flat rounds.
5. Cook each flatbread in the skillet for about 2-3 minutes on each side until lightly browned.
6. Once cooked, remove from heat and top with crumbled feta cheese and mixed spring vegetables.
7. Garnish with fresh herbs before serving.
