Description

This Slow Cooker Hawaiian Chicken is a delicious and easy meal that combines tender chicken with sweet pineapple and savory soy sauce for a tropical twist.


Ingredients

2 lbs boneless, skinless chicken thighs
1 cup pineapple chunks (fresh or canned)
1/2 cup soy sauce
1/4 cup brown sugar
1/4 cup ketchup
2 cloves garlic, minced
1 tsp ground ginger
1/2 tsp black pepper
1 red bell pepper, sliced
1 green bell pepper, sliced
2 green onions, chopped (for garnish)


Instructions

1. Place the chicken thighs in the slow cooker.
2. In a separate bowl, whisk together the soy sauce, brown sugar, ketchup, garlic, ginger, and black pepper.
3. Pour the sauce over the chicken in the slow cooker.
4. Add the pineapple chunks and sliced bell peppers on top of the chicken.
5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
6. Shred the chicken with two forks and mix it back into the sauce before serving.
7. Garnish with chopped green onions before serving.
