Ingredients
4 boneless, skinless chicken breasts
1 cup grated Parmesan cheese
1 cup breadcrumbs
2 large eggs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
Salt and pepper to taste
2 cups broccoli florets
2 cups baby carrots
2 tablespoons olive oil
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a shallow bowl, whisk together the eggs. In another bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.
3. Dip each chicken breast in the egg wash and then coat with the breadcrumb mixture.
4. On a large baking sheet lined with parchment paper, arrange the coated chicken breasts.
5. In a separate bowl, toss the broccoli and carrots with olive oil, salt, and pepper. Spread them around the chicken on the baking sheet.
6. Bake in the preheated oven for about 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and vegetables are tender.
