Description
A hearty and comforting soup made with Italian sausage, cheese tortellini, and fresh vegetables, all cooked in one pot for easy cleanup!
Ingredients
1 pound Italian sausage (mild or spicy)
1 medium onion, diced
2 cloves garlic, minced
3 cups chicken broth
1 can (14.5 oz) diced tomatoes, with juices
2 cups fresh spinach
1 package (9 oz) cheese tortellini
1 teaspoon Italian seasoning
Salt and pepper to taste
Grated Parmesan cheese for serving
Instructions
1. In a large pot over medium heat, add the Italian sausage. Cook until browned, breaking it up into smaller pieces as it cooks.
2. Add the diced onion and minced garlic to the pot and sauté until the onion is translucent.
3. Pour in the chicken broth and add the diced tomatoes (with their juices). Bring to a simmer.
4. Stir in the tortellini and Italian seasoning. Cook according to the package instructions until the tortellini are tender.
5. Add the fresh spinach and stir until wilted. Season with salt and pepper to taste.
6. Serve hot, topped with grated Parmesan cheese.
Notes
This soup can be customized with your favorite vegetables or by using different types of sausages. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
