Easy Mini BBQ Meatloaf: Your Weeknight Comfort Fix (With Built-In Portion Control)

  • Author: Tyla
  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

Say goodbye to boring old meatloaf and hello to the adorable, saucy glow-up you didn’t know you needed — Mini BBQ Meatloaf! These lil’ cuties are juicy on the inside, sticky on the outside, and packed with bold BBQ flavor in every bite. They cook way faster than your grandma’s loaf (sorry, Nana), and they’re perfectly portioned, which means no more slice-and-guess situations. Whether you’re feeding picky eaters or just want something cozy and foolproof, this is your new favorite dinner hack.

Ingredients

Scale

1 lb ground beef (or turkey if you’re feelin’ virtuous)
1/2 cup breadcrumbs (panko, Italian, whatever you’ve got)
1/3 cup milk
1 egg
1/4 cup onion, finely chopped
1/2 cup shredded cheddar cheese (optional but recommended)
1 tsp garlic powder
1/2 tsp smoked paprika
Salt + black pepper to taste
1/2 cup BBQ sauce, divided (your fave brand or homemade)

Instructions

Step 1: Preheat + Prep
Preheat your oven to 375°F (190°C). Line a baking sheet or muffin tin with foil or parchment. Less mess = more chill.

Step 2: Mix the Meat Party
In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, cheese, garlic powder, paprika, salt, pepper, and half the BBQ sauce. Mix gently — overmixing makes things tough, and we want juicy here.

Step 3: Shape the Minis
Form mixture into 6–8 small loaves or press into a greased muffin tin for the cutest meatloaf muffins ever.

Step 4: Bake + Sauce It Up
Bake for 20 minutes, then brush with the rest of the BBQ sauce. Bake another 5–10 minutes until cooked through and glossy on top. Internal temp should hit 160°F (71°C) if you’re the thermometer type.

Step 5: Serve and Swoon
Let them rest for 5 minutes (they need a moment). Serve with mashed potatoes, mac & cheese, or a simple salad if you’re trying to keep it light.

Notes

Use ground turkey or chicken for a lighter take.
Add chopped jalapeños or hot sauce for spicy BBQ vibes.
Swap cheddar for pepper jack or gouda for melty magic.
Sneak in some shredded carrots or zucchini for a veggie boost
