This Italian Tortellini Pasta Salad is a delightful combination of fresh ingredients, perfect for a light meal or a side dish at your next gathering.
Ingredients
12 oz cheese tortellini
1 cup cherry tomatoes, halved
1/2 cup black olives, sliced
1/2 cup bell pepper, diced
1/4 cup red onion, finely chopped
1/2 cup mozzarella balls, halved
1/4 cup fresh basil, chopped
1/4 cup olive oil
2 tbsp balsamic vinegar
Salt and pepper to taste
Instructions
1. Cook the tortellini according to package instructions. Drain and rinse under cold water to cool.
2. In a large bowl, combine the cooled tortellini, cherry tomatoes, black olives, bell pepper, red onion, mozzarella balls, and basil.
3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
4. Pour the dressing over the salad and toss gently to combine.
5. Chill in the refrigerator for at least 30 minutes before serving.
Notes
This salad can be made ahead of time and stored in the refrigerator for up to 3 days. Feel free to add other vegetables like cucumbers or spinach as desired.
