Ingredients

1 lb ground beef
1 onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped
1 can (15 oz) diced tomatoes
1 can (8 oz) tomato sauce
2 cups elbow macaroni
2 cups beef broth
1 tsp Italian seasoning
Salt and pepper to taste
Grated cheese for topping (optional)


Instructions

1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.
2. Add chopped onion, garlic, and bell pepper to the pot and sauté until vegetables are tender.
3. Stir in diced tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper.
4. Bring the mixture to a simmer and then add the elbow macaroni.
5. Cover and cook for about 20 minutes or until the pasta is tender.
6. Serve hot with grated cheese on top if desired.

Notes

This goulash can be made ahead of time and reheated. Feel free to add other vegetables like zucchini or carrots for extra nutrition.
