Ingredients
Scale
- 1.5 lbs baby potatoes (about 12-14)
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tbsp butter
- 1 tsp dried thyme (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
1. Cook the Potatoes:
- Rinse the baby potatoes and cut any large ones in half. Leave the smaller ones whole.
- Bring a large pot of salted water to a boil. Add the potatoes and cook for about 15-20 minutes, or until they are tender when pierced with a fork.
- Drain the potatoes and set them aside.
2. Prepare the Creamy Garlic Sauce:
- In a large skillet, heat the olive oil and butter over medium heat.
- Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
- Pour in the heavy cream and stir. Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the sauce to thicken slightly.
- Add the grated Parmesan cheese and stir until the cheese has melted and the sauce is smooth. Season with salt, pepper, and dried thyme (if using).
3. Combine the Potatoes and Sauce:
- Add the cooked baby potatoes to the skillet and toss them gently in the creamy garlic sauce, ensuring they are well-coated.
- Let them cook together for an additional 5 minutes, allowing the potatoes to absorb some of the flavors of the sauce.
4. Serve:
- Transfer the creamy garlic sauce baby potatoes to a serving dish.
- Garnish with freshly chopped parsley for a burst of color and added freshness.
- Serve hot as a side dish with your favorite protein or main course.
Notes
- Add Veggies: For extra flavor and color, you can toss in some sautéed spinach, peas, or mushrooms along with the potatoes.
- Make it Spicy: Add a pinch of red pepper flakes to the sauce for a spicy kick.
- Use Sour Cream: For a tangy twist, you can replace half of the heavy cream with sour cream for an extra creamy texture.
- Roast the Potatoes: If you prefer roasted potatoes, toss the baby potatoes with olive oil, salt, and pepper, then roast them in a preheated oven at 400°F (200°C) for 20-25 minutes before adding the creamy garlic sauce.
