These coconut macaroons are sweet, chewy, and perfect for satisfying your sweet tooth. Made with only a few simple ingredients, they are easy to prepare and bake.
Ingredients
2 3/4 cups shredded sweetened coconut
1/2 cup granulated sugar
1/4 teaspoon salt
2 large egg whites
1 teaspoon vanilla extract
Instructions
1. Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, combine shredded coconut, sugar, and salt.
3. In another bowl, whisk the egg whites and vanilla extract until frothy but not stiff.
4. Pour the egg whites into the coconut mixture and stir until fully combined.
5. Use a spoon or cookie scoop to drop rounded tablespoons of the mixture onto the prepared baking sheet.
6. Bake for 20-25 minutes or until the tops are golden brown.
7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store macaroons in an airtight container at room temperature for up to one week. You can also dip them in chocolate for an extra treat!
