Ingredients

For the Burgers:
1 lb ground beef (80/20 is perfect)
Salt and freshly ground black pepper
4 slices American cheese (or cheddar, if you prefer)
4 burger buns (potato buns or brioche are chef’s kiss)
Butter for toasting buns

Optional Toppings:
Lettuce
Tomato
Pickles
Onions (raw or caramelized)
Ketchup, mustard, mayo, burger sauce—your call


Instructions

Step 1: Shape and Season
Divide the ground beef into 4 equal portions and gently form into loose balls—don’t pack them too tight. Season generously with salt and pepper on both sides.

Step 2: Toast the Buns
Heat a skillet (cast iron is ideal) over medium heat. Add a bit of butter and toast the cut sides of the buns until golden. Remove and set aside.

Step 3: Cook the Patties
Crank the heat to medium-high. Place the beef balls in the hot skillet and immediately press them down with a spatula or burger press. You want thin patties with jagged edges—they’ll crisp up beautifully.
Cook for about 2-3 minutes without moving them. Flip, then immediately place a slice of cheese on each. Cook for another 1-2 minutes until the cheese is melty and the patties are cooked through but still juicy.

Step 4: Assemble
Place your cheesy patty on the bottom bun. Load it up with your favorite toppings. Crown it with the top bun and serve immediately.

Notes

Add a second patty if you’re feeling bold—double the meat, double the glory.
Sauté onions in the same pan after the burgers for extra flavor.
Spread sauces on both the top and bottom buns for even bite coverage.
