Description

Ingredients

4 large potatoes, peeled and diced
1 onion, chopped
2 cloves garlic, minced
4 cups chicken or vegetable broth
1 cup heavy cream
2 tablespoons Cajun seasoning
Salt and pepper to taste
2 tablespoons olive oil
Chopped green onions for garnish


Instructions

1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
2. Add the diced potatoes and Cajun seasoning, stirring well to coat the potatoes.
3. Pour in the broth and bring to a boil. Reduce heat and let simmer for 15-20 minutes, or until potatoes are tender.
4. Use an immersion blender to puree the soup until smooth (or transfer to a blender in batches).
5. Stir in the heavy cream and season with salt and pepper to taste. Heat through before serving.
6. Serve hot, garnished with chopped green onions.

Notes

This soup can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat gently before serving.
