Description
A delightful and fresh dish that combines tender orzo pasta, crisp asparagus, and creamy feta cheese. Perfect as a side dish or a light main course.
Ingredients
1 cup orzo pasta
1 bunch asparagus, trimmed and cut into 2-inch pieces
1 cup crumbled feta cheese
2 tablespoons olive oil
1 lemon, zested and juiced
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente. About 8-10 minutes.
2. In the last 2 minutes of cooking, add the asparagus to the pot with the orzo.
3. Reserve 1/2 cup of the pasta cooking water, then drain the orzo and asparagus.
4. In a large bowl, combine the cooked orzo and asparagus with olive oil, lemon zest, lemon juice, salt, and pepper.
5. Stir in the crumbled feta cheese and mix gently to combine.
6. If needed, add some reserved pasta water to achieve desired creaminess.
7. Serve warm or at room temperature, garnished with fresh parsley.
Notes
This dish can be served warm or chilled as a salad. Feel free to add other vegetables like cherry tomatoes or bell peppers for extra color and flavor.
