Ingredients
2 cups cooked chicken, shredded
1 cup corn, canned or roasted
1 cup black beans, drained and rinsed
1 red bell pepper, chopped
1/2 red onion, finely diced
1 avocado, diced
1/2 cup cherry tomatoes, halved
1 cup romaine lettuce, chopped
Instructions
1. In a large bowl, combine the shredded chicken, corn, black beans, red bell pepper, red onion, avocado, cherry tomatoes, and romaine lettuce.
2. In a separate bowl, whisk together olive oil, lime juice, cumin, salt and pepper to taste.
3. Pour the dressing over the salad and toss gently to combine.
