Ingredients
2 medium zucchinis, thinly sliced
1 cup of breadcrumbs (preferably whole wheat)
1/2 cup of grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Olive oil spray
Instructions
1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
3. Dip each zucchini slice into the breadcrumb mixture, pressing lightly to adhere.
4. Place the coated zucchini slices on the prepared baking sheet in a single layer.
5. Lightly spray the tops with olive oil spray.
6. Bake for 20-25 minutes or until golden brown and crispy, flipping halfway through.
