This creamy chicken and rice casserole is the ultimate comfort food, combining tender chicken, fluffy rice, and a rich, creamy sauce. Perfect for a family dinner!
Ingredients
2 cups cooked chicken, shredded
1 cup long-grain white rice
1 can (10.5 oz) cream of chicken soup
1 cup chicken broth
1 cup frozen mixed vegetables (peas, carrots, corn)
1/2 cup sour cream
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 cup shredded cheddar cheese (optional)
Instructions
1. Preheat the oven to 350°F (175°C).
2. In a large bowl, combine the cooked chicken, rice, cream of chicken soup, chicken broth, mixed vegetables, sour cream, garlic powder, onion powder, salt, and pepper.
3. Mix well until all ingredients are combined.
4. Pour the mixture into a greased 9×13 inch baking dish.
5. If using, sprinkle shredded cheddar cheese on top.
6. Cover with aluminum foil and bake for 25 minutes.
7. Remove the foil and bake for an additional 10-15 minutes or until heated through and bubbly.
Notes
This casserole can be prepared ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the cooking time if baking from cold.
