Description
Prepare yourself for the most dangerously addictive little bites of heaven you’ve ever experienced. These Creamy Biscoff Truffle Bites are basically what happens when cookie butter decides to get all fancy and dressed up for a party. We’re talking silky smooth truffle centers packed with that signature caramelized cookie flavor, rolled in various coatings that make them look like they came from some high-end chocolate shop — but plot twist, you made them in your own kitchen with like five ingredients.
One bite and you’ll understand why Biscoff has taken over the world. These little spheres of joy are rich, creamy, and have that perfect balance of sweet and slightly spiced that makes your brain do that happy dance. Fair warning: making a batch means you’ll probably eat half of them “for quality control purposes.” It’s science.
Ingredients
For the Truffle Centers:
- 1 jar (14 oz) Biscoff cookie butter (smooth, not crunchy)
- 8 oz cream cheese, softened to room temperature
- 2 cups powdered sugar, sifted
- 1 tsp vanilla extract
- Pinch of salt (trust me on this)
For the Fancy Coatings:
- 1 cup powdered sugar (for dusting)
- 1 cup cocoa powder (for the chocolate lovers)
- 1 cup finely chopped toasted hazelnuts
- 1 cup crushed Biscoff cookies (because meta is good)
- 1 cup shredded coconut
- 1 cup mini chocolate chips
- White chocolate for drizzling (optional but gorgeous)
Equipment You’ll Need:
- Small cookie scoop or melon baller (for uniform perfection)
- Baking sheets
- Parchment paper
- Your hands (and maybe some disposable gloves)
Instructions
Line two baking sheets with parchment paper. Set up small bowls with all your coating options. This is about to get messy in the best way.
In a large bowl, beat softened cream cheese until smooth and fluffy (about 2 minutes with an electric mixer).
Add Biscoff cookie butter and beat until completely combined. The mixture will look a little weird at first, but keep going.
Gradually add powdered sugar, vanilla, and salt. Beat until smooth and thick enough to hold its shape. If it’s too soft, pop it in the fridge for 30 minutes.
Using a small cookie scoop or your hands, roll mixture into 1-inch balls. Don’t stress about perfection — rustic truffles have character.
Place on prepared baking sheets and chill for at least 30 minutes. This makes them easier to coat without falling apart.
Set up your coating assembly line. Take a few truffles at a time and roll them in your chosen coatings.
For powdered sugar: Roll gently and dust off excess For cocoa powder: Roll thoroughly for full coverage For nuts/cookies/coconut: Press gently to help them stick For chocolate chips: Roll and press lightly
If you’re feeling fancy, drizzle some with melted white chocolate using a fork or squeeze bottle. Let the chocolate set before storing.
Refrigerate finished truffles for at least 1 hour before serving. They’ll firm up perfectly and the flavors will meld together beautifully.
Serve in mini paper cups for that professional bakery look, or just pile them on a pretty plate and watch them disappear.
