Description

Ingredients

1 batch cornbread (prepared from a mix or homemade)
2 cups whipped cream
1 cup canned black beans, rinsed and drained
1 cup corn kernels (fresh, frozen, or canned)
1 cup diced tomatoes
1/2 cup cheddar cheese, shredded
1/4 cup green onions, sliced
1/4 cup cilantro, chopped


Instructions

1. Prepare the cornbread according to package instructions or your favorite recipe. Allow it to cool completely before crumbling.
2. In a large trifle bowl or individual serving glasses, layer half of the crumbled cornbread at the bottom.
3. Add half of the whipped cream on top of the cornbread.
4. Layer half of the black beans, corn kernels, diced tomatoes, cheddar cheese, green onions, and cilantro.
5. Repeat the layers with the remaining ingredients in the same order.
6. Finish with a dollop of whipped cream on top and a sprinkle of cilantro for garnish.
7. Chill in the refrigerator for at least 30 minutes before serving.
