This Cilantro Lime Pasta Salad is a vibrant and creamy twist on the classic. Perfect for warm-weather meals, picnics, or potlucks, it combines tender pasta with fresh veggies and a zesty cilantro-lime dressing. With optional add-ins like black beans or corn, it’s hearty enough to enjoy as a side or a light standalone dish.
Ingredients
For the Salad:
12 oz rotini or bowtie pasta
1 cup cherry tomatoes, halved
1 cup corn (fresh, canned, or thawed frozen)
1 red bell pepper, diced
¼ cup red onion, finely chopped
½ cup black beans, drained and rinsed (optional)
¼ cup fresh cilantro, chopped
For the Dressing:
½ cup mayonnaise
¼ cup sour cream or Greek yogurt
Juice of 2 limes
Zest of 1 lime
1 clove garlic, minced
½ tsp ground cumin
Salt and pepper, to taste
2 tbsp finely chopped cilantro (from the amount above)
Instructions
Cook pasta according to package directions. Drain and rinse under cold water.
In a small bowl, whisk together all dressing ingredients until smooth. Adjust seasoning to taste.
In a large bowl, combine pasta, cherry tomatoes, corn, bell pepper, red onion, black beans (if using), and cilantro.
Pour the dressing over the salad and toss well to coat.
Chill in the fridge for at least 30 minutes to allow flavors to meld.
Garnish with lime wedges or extra cilantro before serving, if desired.
Notes
Swap sour cream for Greek yogurt for a lighter, tangier version.
Add grilled chicken or shrimp to turn it into a full meal.
