Ingredients
2 boneless, skinless chicken breasts
2 tablespoons chipotle sauce
1 teaspoon olive oil
4 cups mixed greens (spinach, arugula, romaine)
1 cup cherry tomatoes, halved
1 avocado, diced
1/2 cup crumbled feta cheese
4 hard-boiled eggs, sliced
1/4 cup red onion, thinly sliced
Salt and pepper to taste
Instructions
1. Preheat the grill or a skillet over medium-high heat.
2. In a bowl, coat the chicken breasts with chipotle sauce and olive oil; season with salt and pepper.
3. Grill or cook the chicken for about 6-7 minutes on each side until fully cooked. Let rest before slicing.
4. In a large bowl, combine mixed greens, cherry tomatoes, avocado, feta cheese, hard-boiled eggs, and red onion.
5. Top the salad with sliced chipotle chicken.
6. Serve immediately with your choice of dressing.
Notes
You can substitute grilled chicken with rotisserie chicken for a quicker prep. Adjust the spice level by using more or less chipotle sauce.
