This hearty Chicken Wild Rice Soup is perfect for chilly days. It’s packed with tender chicken, nutritious wild rice, and a medley of vegetables.
Ingredients
1 cup wild rice
2 cups cooked chicken, shredded
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
2 tablespoons olive oil
1 teaspoon dried thyme
Salt and pepper to taste
Instructions
1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté until softened (about 5 minutes).
2. Stir in garlic and thyme; cook for another minute.
3. Add the wild rice and chicken broth; bring to a boil. Reduce heat to low and simmer for about 45 minutes or until the rice is tender.
4. Stir in the shredded chicken and heavy cream; heat through.
5. Season with salt and pepper to taste before serving.
Notes
This soup can be made ahead of time and stored in the refrigerator for up to 3 days. It also freezes well.
