Instructions

Step 1: Cook the Pasta

Start by bringing a large pot of salted water to a boil. Add your pasta and cook according to the package directions, until al dente. Once done, reserve about 1/2 cup of pasta water and then drain the pasta. Set it aside.

Step 2: Cook the Chicken

While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Add the diced chicken pieces, season with salt and pepper, and cook for about 5-7 minutes, until the chicken is browned and cooked through. Once cooked, remove the chicken from the skillet and set it aside.

Step 3: Make the Sauce

In the same skillet, add the minced garlic and cook for 30 seconds until fragrant. Add the diced tomatoes, tomato paste, basil, oregano, and red pepper flakes (if using). Stir everything together and bring to a simmer. Let it cook for about 5 minutes to let the flavors meld together. If the sauce seems too thick, add some of the reserved pasta water until you reach your desired consistency.

Step 4: Combine and Serve

Return the cooked chicken to the skillet with the tomato sauce and stir to combine. Add the cooked pasta and toss everything together until well coated with the sauce. If needed, add a little more pasta water to help everything come together.
