This hearty Chicken Sausage Soup is perfect for chilly days. Packed with flavor and nutritious ingredients, it’s a comforting meal that comes together quickly.
Ingredients
1 lb chicken sausage, sliced
1 tablespoon olive oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
2 cups kale or spinach, chopped
Salt and pepper to taste
Instructions
1. In a large pot, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5 minutes.
2. Add the diced onion, carrots, and celery to the pot. Cook for another 5 minutes until the vegetables are softened.
3. Stir in the minced garlic, thyme, and oregano; cook for 1 minute until fragrant.
4. Pour in the chicken broth and add the diced tomatoes (with juices). Bring to a boil.
5. Reduce heat and let it simmer for about 15 minutes.
6. Add the chopped kale or spinach and simmer for an additional 5 minutes until wilted.
7. Season with salt and pepper to taste before serving.
Notes
This soup can be made ahead of time and stored in the refrigerator for up to three days. It also freezes well!
