Description

A comforting and hearty soup packed with chicken, crispy bacon, and tender potatoes, perfect for chilly days.


Ingredients

2 cups cooked chicken, shredded
4 slices of bacon, diced
4 medium potatoes, peeled and diced
1 small onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
1 teaspoon dried thyme
Salt and pepper to taste
Chopped green onions for garnish


Instructions

1. In a large pot over medium heat, cook the diced bacon until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
2. Add the chopped onion and garlic to the pot and sauté until softened.
3. Stir in the diced potatoes and cook for a few minutes before adding the chicken broth.
4. Bring to a boil, then reduce heat to simmer until potatoes are tender (about 15-20 minutes).
5. Add shredded chicken, heavy cream, thyme, salt, and pepper. Simmer for an additional 5 minutes.
6. Serve hot, garnished with crispy bacon and chopped green onions.

Notes

This soup can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat on the stove before serving.
