Ingredients
4 boneless, skinless chicken breasts
1 cup cream cheese, softened
1 cup shredded cheddar cheese
2-3 jalapenos, finely chopped (adjust for spice level)
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
2 tablespoons olive oil
1 cup corn kernels (fresh or frozen)
1/2 cup heavy cream
1 tablespoon butter
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a bowl, combine the cream cheese, cheddar cheese, chopped jalapenos, garlic powder, onion powder, salt, and pepper.
3. Carefully slice a pocket into each chicken breast and stuff with the cheese mixture.
4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts on both sides until golden brown (about 4-5 minutes per side).
5. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through.
6. Meanwhile, in a saucepan over medium heat, melt the butter. Add corn kernels and sauté for about 3-4 minutes.
7. Pour in heavy cream and simmer for another 5 minutes until slightly thickened; season with salt and pepper.
8. Serve the cheesy jalapeno stuffed chicken with a side of creamed corn.
