Description
Delicious and healthy cheesy baked vegetable rolls, perfect as an appetizer or snack!
Ingredients
1 cup of all-purpose flour
1/2 cup of grated cheese (cheddar or mozzarella)
1 cup of mixed vegetables (carrots, bell peppers, spinach)
2 eggs
1/4 cup of milk
1 teaspoon of baking powder
Salt and pepper to taste
Olive oil for brushing
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a large mixing bowl, combine flour, baking powder, salt, and pepper.
3. In another bowl, whisk together eggs and milk.
4. Gradually add the wet ingredients to the dry ingredients; mix until just combined.
5. Fold in the grated cheese and mixed vegetables until evenly distributed.
6. On a floured surface, roll out the dough into a rectangle about 1/4 inch thick.
7. Cut into strips or squares and roll them up tightly.
8. Place the rolls on a baking sheet lined with parchment paper.
9. Brush the tops with olive oil.
10. Bake for 20-25 minutes or until golden brown.
Notes
You can substitute any vegetables you like based on your preference! Serve warm with your favorite dipping sauce.
