Description

Crunchy on the outside and creamy on the inside, these Cheesy Bacon Potato Croquettes are the perfect appetizer or snack for any occasion!


Ingredients

2 cups mashed potatoes (leftover or freshly made)
1 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled
1/4 cup green onions, chopped
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 cup bread crumbs
2 eggs, beaten
Salt and pepper to taste
Oil for frying


Instructions

1. In a large bowl, combine the mashed potatoes, cheddar cheese, crumbled bacon, green onions, garlic powder, onion powder, salt, and pepper. Mix until well combined.
2. Shape the potato mixture into small balls or patties.
3. Dip each croquette into the beaten eggs and then roll in bread crumbs until fully coated.
4. Heat oil in a frying pan over medium heat. Once hot, add the croquettes in batches and fry until golden brown on all sides (about 3-4 minutes per side).
5. Remove from oil and drain on paper towels before serving.

Notes

These croquettes can also be baked for a healthier option. Preheat your oven to 400°F (200°C) and bake for about 20-25 minutes or until golden brown.
