This Cheddar Bay Hamburger Casserole is basically what happens when you combine seasoned ground beef, creamy cheese sauce, and vegetables, then top it all with a fluffy, cheesy biscuit topping that tastes exactly like those addictive restaurant biscuits. It’s like having the best parts of a hearty dinner and those irresistible biscuits all in one glorious dish. Ingredients
For the Hamburger Base:
- 2 lbs ground beef (80/20 is perfect)
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 packet (1 oz) onion soup mix
- 1 can (10.75 oz) cream of mushroom soup
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup beef broth
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
For the Cheddar Bay Biscuit Topping:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tbsp granulated sugar
- 1 tsp garlic powder
- 1 tsp dried parsley flakes
- 1/2 tsp salt
- 1/2 tsp onion powder
- 1 1/3 cups buttermilk
- 1/2 cup butter, melted
- 2 cups sharp cheddar cheese, shredded
For the Garlic Butter Topping:
- 4 tbsp butter, melted
- 2 cloves garlic, minced
- 1/2 tsp dried parsley flakes
- 1/4 tsp garlic powder
Instructions
Preheat your oven to 425°F.
Grease a 9×13 baking dish — this is where all the magic will happen.
In a large skillet over medium-high heat, brown the ground beef until it’s beautifully crispy, about 8-10 minutes.
Don’t drain all the fat — we need some of those flavors.
Add diced onion and cook until softened, about 5 minutes.
Stir in minced garlic and cook for another minute until fragrant.
Stir in the onion soup mix, cream of mushroom soup, frozen vegetables, beef broth, and Worcestershire sauce.
Season with salt and pepper, then let it simmer for 5-7 minutes until slightly thickened.
Taste and adjust seasoning — this should be savory and rich.
Transfer the mixture to your prepared baking dish and spread evenly.
In a large bowl, whisk together flour, baking powder, sugar, garlic powder, parsley flakes, salt, and onion powder.
In another bowl, combine buttermilk and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined — don’t overmix.
Fold in 1 1/2 cups of the shredded cheddar cheese.
Drop large spoonfuls of the biscuit mixture over the beef mixture — it doesn’t need to be perfect or completely covered.
Sprinkle the remaining 1/2 cup of cheese over the top.
Bake for 20-25 minutes until the biscuit topping is golden brown and cooked through.
A toothpick inserted into a biscuit should come out clean.
While it’s baking, mix together the melted butter, minced garlic, parsley, and garlic powder for the topping.
As soon as the casserole comes out of the oven, brush the biscuit tops with this garlic butter mixture.
Let it rest for 5-10 minutes before serving (I know, the wait is torture).
Notes
Serve with a simple green salad to balance all that cheesy goodness.
Steamed broccoli or green beans make great veggie sides.
