Ingredients

Cajun Seasoning
1 teaspoon paprika
¼ teaspoon cayenne pepper
¼ teaspoon oregano
¼ teaspoon thyme
¼ teaspoon salt

Chicken Bake
2 small bell peppers, thinly sliced (or use mini sweet peppers)
4 small chicken breasts
4 cloves garlic, minced
6 oz cream cheese, cold and sliced into 8 slices
½ cup shredded cheddar cheese

Instructions

Make Cajun Seasoning
Mix paprika, cayenne, oregano, thyme, and salt in a small bowl.

Prepare Chicken
Preheat oven to 375°F.
Spread sliced bell peppers in the bottom of a casserole dish.
Place chicken breasts on top of the peppers.
Generously season the chicken with Cajun spice blend (use as much as you like).
Top with minced garlic, then 2 slices of cream cheese per chicken breast.
Sprinkle cheddar cheese over everything.
Bake uncovered for 20–30 minutes, or until chicken is fully cooked.
Broil for 2 minutes at the end for a golden top, if desired.
To serve, scoop out the cooked bell peppers and arrange them around the chicken.
