These little golden beauties are stuffed with fluffy scrambled eggs, melty cheese, and whatever else your heart desires (bacon, anyone?). Ingredients
For the Roll-Ups:
- 2 sheets frozen puff pastry, thawed
- 8 large eggs, scrambled and cooled
- 1 1/2 cups shredded cheese (cheddar, gruyere, or whatever you love)
- 6 strips bacon, cooked and crumbled (optional but highly recommended)
- 2 green onions, finely chopped
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
For the Glaze:
- 1 cup powdered sugar
- 2–3 tbsp milk or cream
- 1/2 tsp vanilla extract
- Pinch of salt
Optional Add-Ins (Go Wild):
- Cooked breakfast sausage
- Sautéed mushrooms
- Spinach or arugula
- Diced ham
- Jalapeños for heat
- Everything bagel seasoning
Instructions
Scramble your eggs until they’re just set but still a little creamy — they’ll cook more in the oven. Let them cool completely (this is important, trust me). Mix in your cheese, bacon, green onions, salt, and pepper. Taste and adjust because life’s too short for bland breakfast.
On a lightly floured surface, roll each puff pastry sheet into a 12×10 inch rectangle. Don’t stress about perfection — rustic is charming.
Spread half the egg mixture along one long edge of each pastry sheet, leaving about an inch border. Roll tightly from the filled edge, like you’re making the world’s most delicious burrito. Pinch the seam to seal.
Using a sharp knife, cut each log into 1-inch thick rounds. Place them cut-side up on parchment-lined baking sheets. Brush the tops with beaten egg for that gorgeous golden finish.
Preheat your oven to 400°F. Bake for 18-22 minutes until they’re puffed up and golden brown. Your kitchen will smell incredible and your neighbors might start asking questions.
