  • Author: Tyla

  • Yield: 12 roll-ups 1x

Description

Look, we’ve all been there. It’s 7 AM, you’re running late, and breakfast is the last thing on your mind. But what if I told you there’s a way to have bakery-quality breakfast pastries ready in your freezer, just waiting to save your morning? Meet Breakfast Roll-Ups — basically the lovechild of a croissant and your favorite breakfast sandwich, wrapped up in buttery, flaky puff pastry that’ll make your kitchen smell like a fancy café.

These little golden beauties are stuffed with fluffy scrambled eggs, melty cheese, and whatever else your heart desires (bacon, anyone?). They’re like portable breakfast perfection that you can grab and go, or sit down and savor with a cup of coffee. Plus, they look so damn pretty that your Instagram followers will think you’ve got your life together. Spoiler alert: you kinda do now.

Ingredients

Scale

For the Roll-Ups:

  • 2 sheets frozen puff pastry, thawed
  • 8 large eggs, scrambled and cooled
  • 1 1/2 cups shredded cheese (cheddar, gruyere, or whatever you love)
  • 6 strips bacon, cooked and crumbled (optional but highly recommended)
  • 2 green onions, finely chopped
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

For the Glaze:

  • 1 cup powdered sugar
  • 23 tbsp milk or cream
  • 1/2 tsp vanilla extract
  • Pinch of salt

Optional Add-Ins (Go Wild):

  • Cooked breakfast sausage
  • Sautéed mushrooms
  • Spinach or arugula
  • Diced ham
  • Jalapeños for heat
  • Everything bagel seasoning

Instructions

Step 1: Prep Your Filling

Scramble your eggs until they’re just set but still a little creamy — they’ll cook more in the oven. Let them cool completely (this is important, trust me). Mix in your cheese, bacon, green onions, salt, and pepper. Taste and adjust because life’s too short for bland breakfast.

Step 2: Roll It Out

On a lightly floured surface, roll each puff pastry sheet into a 12×10 inch rectangle. Don’t stress about perfection — rustic is charming.

Step 3: Fill and Roll

Spread half the egg mixture along one long edge of each pastry sheet, leaving about an inch border. Roll tightly from the filled edge, like you’re making the world’s most delicious burrito. Pinch the seam to seal.

Step 4: Slice and Shine

Using a sharp knife, cut each log into 1-inch thick rounds. Place them cut-side up on parchment-lined baking sheets. Brush the tops with beaten egg for that gorgeous golden finish.

Step 5: Bake to Glory

Preheat your oven to 400°F. Bake for 18-22 minutes until they’re puffed up and golden brown. Your kitchen will smell incredible and your neighbors might start asking questions.

Step 6: Glaze and Amaze

While they’re cooling, whisk together your glaze ingredients. Drizzle over the warm roll-ups and watch the magic happen.

Notes

Serve these babies warm with fresh fruit and good coffee. They’re also incredible with a side of crispy hash browns if you’re going full brunch mode. For special occasions, arrange them on a pretty platter with some fresh berries and suddenly you’re a breakfast hero.
