1 lb large fresh strawberries
8 oz cream cheese, softened
¼ cup powdered sugar
½ tsp vanilla extract
12 tbsp heavy cream (optional)
¼ cup graham cracker crumbs
Fresh mint leaves (optional)
Extra small strawberries (optional)


Instructions

Wash strawberries and pat dry. Cut off the tops to create a flat base, and gently hollow out the centers.
In a mixing bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth and fluffy. Add heavy cream if needed to loosen the consistency.
Transfer filling into a piping bag with a star tip (or use a ziplock bag with a snipped corner).
Pipe cheesecake filling into each hollowed strawberry.
Sprinkle tops with graham cracker crumbs.
Garnish with fresh mint leaves or tiny strawberries for extra flair.
Chill for 30 minutes before serving. Enjoy!
