  • 1 cup shredded cheddar cheese

  • 1 cup shredded Monterey Jack or pepper jack cheese

Instructions

  1. Heat the oil in a large deep skillet or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess grease if needed.

  2. Add onion and garlic and cook for 2–3 minutes until soft and fragrant. Stir in taco seasoning and tomato paste and cook for another minute to wake up those spices.

  3. Pour in the broth, enchilada sauce, and diced tomatoes. Stir everything together, then mix in the dry pasta. Make sure the noodles are mostly submerged.
