Ingredients

- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper

- 8 slices thick-cut bacon, chopped
- 1 tbsp bacon fat (reserved from cooking)
For the Cheesy Goodness:
- 1 can (10.5 oz) condensed cheddar cheese soup
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded Monterey Jack cheese
For the Tater Tot Crown:
- 1 bag (32 oz) frozen tater tots
- 1 cup shredded cheddar cheese (for topping)
- 1/4 cup chopped fresh chives
- 2 tbsp melted butter
For the Finishing Touches:
- Diced tomatoes
- Shredded lettuce
- Pickles
- Extra bacon bits
- Burger sauce or ranch for drizzling
Instructions
Preheat oven to 375°F.
In a large skillet, cook chopped bacon over medium heat until crispy.
Remove bacon and set aside, but keep about 1 tbsp of that beautiful bacon fat in the pan.
Add olive oil to the bacon fat and heat over medium-high.
Add diced onion and cook until softened, about 5 minutes.
Add ground beef and cook, breaking it up as it browns.
Add garlic, Worcestershire, ketchup, and all the seasonings.
Cook until beef is fully browned and flavors are combined, about 8-10 minutes.
Drain excess fat if needed.
In a large bowl, mix together the cheese soup, sour cream, mayonnaise, and half the crispy bacon.
Add 1 1/2 cups of the cheddar, all the mozzarella, and all the Monterey Jack.
Stir until well combined — this is your flavor base right here.
Grease a 9×13 inch baking dish generously.
Spread the beef mixture evenly in the bottom.
Pour the cheese sauce mixture over the beef and spread evenly.

Cover with foil and bake for 30 minutes.
Remove foil and bake another 20-25 minutes until tater tots are golden brown and crispy.
