These Authentic Greek Potatoes are roasted to perfection with a blend of olive oil, lemon, and herbs, capturing the essence of traditional Greek cuisine.
Ingredients
2 pounds of baby potatoes, halved
1/2 cup of olive oil
Juice of 2 lemons
4 cloves of garlic, minced
1 tablespoon of dried oregano
Salt and pepper to taste
Fresh parsley for garnish
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
3. Add the halved baby potatoes to the bowl and toss well to coat them in the mixture.
4. Spread the potatoes in a single layer on a baking sheet.
5. Roast in the oven for 40-45 minutes or until golden brown and crispy, flipping halfway through.
6. Once done, remove from oven and garnish with fresh parsley before serving.
Notes
For extra flavor, you can add some sliced onions or bell peppers to the potatoes before roasting.
