  • Author: Tyla
  • Total Time: 35 minutes
  • Yield: 8 mini cheesecakes 1x

Description

Think of everything you love about rich, creamy cheesecake and gooey, caramelized pecan pie—now shrink it down, make it handheld, and cook it in the air fryer. That’s right: Air Fryer Pecan Pie Cheesecakes are the dessert mash-up you didn’t know you needed but won’t be able to live without. They’ve got a buttery graham cracker crust, luscious cheesecake filling, and a sticky-sweet pecan topping that’s pure Southern charm. And the air fryer? It makes these mini delights easy, fast, and ridiculously foolproof. No water baths, no cracked tops—just golden, creamy perfection in every bite.

Ingredients

Scale

For the Crust:

1 cup graham cracker crumbs
2 tbsp granulated sugar
4 tbsp melted unsalted butter

For the Cheesecake Layer:

8 oz cream cheese, softened
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract

For the Pecan Pie Topping:

1/2 cup chopped pecans
1/4 cup brown sugar
2 tbsp unsalted butter
1 tbsp heavy cream
1/2 tsp vanilla extract
Pinch of salt

For Assembly:

8 silicone or foil muffin cups (they need to fit your air fryer basket)

Instructions

Step 1: Make the Crust

In a bowl, mix graham cracker crumbs, sugar, and melted butter until it looks like wet sand.
Press about a tablespoon of mixture into the bottom of each muffin cup. Freeze for 10 minutes to set.

Step 2: Whip the Cheesecake Layer

In another bowl, beat cream cheese until smooth.
Add sugar, egg, and vanilla. Beat until creamy and lump-free.
Spoon cheesecake batter evenly over each crust.

Step 3: Air Fry the Cheesecakes

Preheat air fryer to 300°F (150°C) if needed.
Place muffin cups in the air fryer basket (work in batches if necessary).
Air fry for 12–15 minutes until just set (they’ll still jiggle slightly in the center).
Cool completely, then chill in the fridge at least 1 hour.

Step 4: Make the Pecan Pie Topping

In a small saucepan, melt butter over medium heat.
Stir in brown sugar, cream, vanilla, salt, and chopped pecans. Simmer gently for 2–3 minutes until glossy and thickened.

Step 5: Assemble the Magic

Top each chilled cheesecake with a spoonful of pecan pie topping.
Serve immediately or refrigerate until ready.

Notes

Serve with a dollop of whipped cream or a drizzle of caramel sauce.
Pair with coffee or bourbon for ultimate cozy vibes.
Great for Thanksgiving dessert tables or casual gatherings.
