Ingredients
2 cups of cooked corned beef, diced
2 cups of potatoes, peeled and diced
1 medium onion, chopped
2 tablespoons of vegetable oil
Salt and pepper to taste
4 eggs (optional)
Instructions
1. In a large skillet, heat the vegetable oil over medium heat.
2. Add the chopped onions and cook until they are softened, about 3-4 minutes.
3. Stir in the diced potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally until the potatoes are golden brown and tender.
4. Add the diced corned beef to the skillet and mix well. Cook for another 5-7 minutes until heated through.
